The first novelty of 2022 is now available, Adega de Borba launches today its first white wine vinified 100% in clay amphorar, the Talhas de Borba White 2021.

It was in 2016 that Adega de Borba produced its first red talha wine, an ancestral Roman system of wine making, enriching the range this time with a white system.

Talhas de Borba Branco 2021 is an Alentejo DOC produced with grapes from the Rabo de Ovelha, Tamarez and Roupeiro varieties, selected in vineyard plots in an integrated production system. Vineyards owned by the members of Adega de Borba, which greatly contributes to the environmental sustainability of the Alentejo region.

In the production process of this talha wine, the grapes are poured into a small tank, destemmed by oscillation and simultaneously with the sumo inside the talhas, where fermentation takes place. During the 3 to 4 weeks in which the fermentation takes place, as the dough rises to the surface of the hoist, it is necessary to proceed with the pumping over. It is mostly mixed with the skins and seeds of the grape, being a consistent operation part of the liquid part.
Once the fermentation is complete and slowly, day after day the skins and seeds fall to the bottom of the pot, forming a compact blanket, per ‘mother’. The main function of this blanket is to naturally filter the wine so that it is ready to drink when it comes out of the hoist by gravity.

Talhas de Borba White 2021 has a ripe lemon color, aroma and flavor of grape variety, fruity quince, with a smooth harmony on the palate.
With a limited edition of 700 bottles and an alcohol content of 12% vol., this wine is designed to accompany snacks and gastronomic dishes, very typical of the Alentejo region.

That’s how this distinguished white carving was born, preferably for consumers who vie for a wine with a traditional profile, with rusticity and typical Alentejo.

At the same time, the new harvest of Talhas de Borba Red is also launched. A wine from the 2021 harvest, which has a garnet color, aroma and flavor of ripe red fruits with a lot of freshness, which persists with softness for a long time.
