Vinification

Grapes from selected vineyards for a Reserve wine. The ripening
of the grapes is monitored very carefully to find the optimal moment for manual harvesting. At Adega, the grapes arrived in excellent condition and were partially destemmed and crushed, followed by fermentation and a prolonged 10-12 day maceration to extract the best aromas and complexity from the fruit. This was followed by malolactic fermentation in stainless steel tanks. For greater complexity, structure and richness, the final blend selected was aged for 12 months in French oak barrels and 6 months in the bottle for final refinement.
