Full flavour with soft, fruity and toasted tannins, with a final freshness of sweet cacao.
Viognier, a recent grape variety in the Alentejo region, demonstrates its oenological characteristics for producing quality wine in this wine. The grapes, sourced from vineyards in integrated production and a sustainability program, yielded a balanced and aromatic wine. The grapes were harvested by hand in the morning to ensure they arrived at the winery at a suitable temperature. After crushing and de-stemming, the grapes were pressed, subjected to cold decantation for 48 hours, and underwent alcoholic fermentation at a controlled temperature of 16°C. Aged on fine lees for 6 months with battonage. After stabilization and filtration, bottling followed, followed by a 3-month aging period in the bottle.
