Method
Portion the meat and place the it in a terracotta baking tray, on a bed of onion and garlic.
Season with salt, Pepper and paprika to taste and ensure the seasonings are well distributed.
Add white wine, fully covering the base of the tray.
Drizzle with olive oil and add the bay leaves.
Roast in the oven for 2.5 to 3 hours.
